Vegan coleslaw recipe, a clean healthy alternative to an old classic
Since I can remember, I’ve always loved coleslaw, whether creamy or the one made with vinegar. But I needed a healthy vegan coleslaw recipe.
The other day after eating broccoli florets with hummus I knew I had to do something with the stalk and the rest of the florets. The Brocoslaw was born. Too hard to eat, not tasty enough to enjoy on its own & too fibrous, this poor fellow often gets a free ride to the compost bin. Today, no more.
Was it that cat or funny baby video that melted my heart, I don’t know but I had to rescue that stalk and make something with it other than use it in a soup. Each parts of the broccoli are edible, even the leaves (use them in juicing). Broccoli, should be a stable in your shopping cart.
A cup chopped will give you your daily dose of Vitamin C. The florets have more phytochemicals but the stalk has more fiber, helping with satiety. Quick & easy to make add this one to your staple each time you use broccoli. In this one I use cranberries as I’m not a big fan of raisins. Since I always have dry cranberries on hand too that’s what went into it.It also looks prettier.

- 1/4 cup Dried cranberries
- 1 bunch broccoli stems (grated or julienne)
- 2 carrots (peeled & grated)
- 1 cup small broccoli florets (1/4 inch size)
- 2 tbsp hemp hearts
- 3 Tbsp olive oil (extra virgin)
- 3 Tbsp rice vinegar
- 3 Tbsp maple syrup
- 3 Tbsp coconut yogurt
- 1 1/2 tsp Dijon mustard
- 1/4 tsp sea salt
- 1/4 tsp fresh black pepper
Peel then grate or julienne the carrots using a julienne peeler. Put in bowl with the cranberries
Make the broccoli slaw by peeling the tough skin off the broccoli stems, then using the peeler, make curls out of the tender insides of the broccoli stems. Put in bowl.
- Make dressing by whisking together the remaining ingredients until smooth; then pour the dressing over the slaw.
Add the hemp hearts, small broccoli florets and toss to combine well.
- Let stand for 30 minutes, tossing several times.
To serve, spoon portions onto individual salad plates.
Let sit overnight in the fridge. The flavor will be greatly enhanced
